Dressings
AS Annie said “your never fully dressed without a smile” and I say a salads never dressed without a dressing. I don’t particularly like shop bought ones and think they are very expensive for what they are after all most dressings can be made with basic store cupboard ingredients and a jam jar to shake it up in. Plus making your own ensures its not packed with salt or saturated fats let alone colours and food enhancers.
Instructions
  1. Roasted Pepper and Basil Dressing 1 roasted peeled red pepper 8 – 10 basil leaves 4 – 5 tablespoons virgin olive oil 1/3 fresh lemon juice Blitz to form a smooth dressing – season to taste. I like this with most mixed leaf or basic green salads
  2. Lime and Coriander drizzle with crushed peanut 3 tablespoons sunflower oil 1 teaspoon sesame oil 3 tablespoons coriander – finely chopped 2 fresh limes – zested and juiced 1 generous teaspoon runny honey 1 heaped tablespoons slated peanuts – crushed Shake or whisk the ingredients together until well mixed. Perfect for Asian inspired salads or noodles.
  3. 1-2-3 mustard shake 1 teaspoon English mustard (Colmans) 2 tablespoons cider vinegar 3 tablespoons virgin olive oil Shake or whisk until emulsified, season to taste. An all-round dressing for an anything tossed salad.
  4. Cheats Thousand Island 1 roasted red pepper – skinned 1/2 small stick celery – de-stringed and chopped 4 tablespoons mayonnaise 1/4 fresh lemon juice Process all the ingredients together and season to taste. My daughter uses thousand island like some people use ketchup but its great drizzled on to salads too.
  5. Blue Cheese Mayonnaise 30 – 40 g blue cheese 3 tablespoons mayonnaise pepper to taste Simply mash all the ingredients together with a fork. Nice on pasta or cabbage based salads like coleslaw or celery based salads like blue cheese waldorf.
  6. Oil and Balsamic 1 part balsamic to 3 parts virgin olive oil – shake the ingredients together, season to taste and pour. For that extra balsamic sweetness add a pinch of caster sugar. Serve on leaves, anything with tomatoes like Greek or roasted vegetables or cheese based salads.
