Scotch Pancakes
Some weekends need a kick-start and what better start than a scrumptious breakfast, so put down your cereal bowls and your butter knives and pan-fry something filling like fluffy pancakes or melt in your mouth gypsy (see recipes) toast served with a morning boost of sweetened fruit – what more do you need, other than maybe a cup of tea and a big yawing stretch.

Instructions
  1. In a large bowl whisk the flour and sugar together to break up any little lumps.
  2. Whisk in the egg followed directly by the milk, whisking until smooth.
  3. Mix in the vanilla and cinnamon, the batter will be firm and thick, just right for spooning.
  4. Spoon tablespoon amounts in to a buttered oiled hot pan and cook until golden on both sides.
