Some weekends need a kick-start and what better start than a scrumptious breakfast, so put down your cereal bowls and your butter knives and pan-fry something filling like fluffy pancakes or melt in your mouth gypsy (see recipes) toast served with a morning boost of sweetened fruit – what more do you need, other than maybe a cup of tea and a big yawing stretch.

Ingredients
- 150 g self-raising flour
- 30 g caster sugar
- 1 whole egg (any)
- 150 ml milk any ( 1/4 pint)
- 1/2 teaspoon vanilla essence
- pinch cinnamon (optional)
- butter & oil or enough to panfry

Instructions
- In a large bowl whisk the flour and sugar together to break up any little lumps.
- Whisk in the egg followed directly by the milk, whisking until smooth.
- Mix in the vanilla and cinnamon, the batter will be firm and thick, just right for spooning.
- Spoon tablespoon amounts in to a buttered oiled hot pan and cook until golden on both sides.
